How does a self-guided course work?
This online course is completely self-led and self-paced. Upon enrolment, you will gain access to the course content which you can work through at your own pace. You can log on whenever it is convenient for you and complete the modules one day at a time.
You can take 14 days or more to complete the course – it's up to you how quickly you want to work through the content. You will have lifetime access to all the recipes, videos and printable information sheets so you can dip in and out of it whenever it suits you.
There is the option to connect with other bakers via Instagram using #bakeschoolbasics to share your experience and move through the course together, supporting each other as your confidence and skills grow.

BakeSchool: Cakes for Beginners is a fun and informative 2-week online course where you will learn a range of foolproof recipes and practical tips you need to bake, ice and decorate delicious – and impressive – cakes.
This course is made up of a combination of a virtual live demonstration (which will be recorded so you can watch it again or in your own time) and printable recipe and information sheets that you can study at your own pace ensuring that you gain the confidence and skill to bake your own beautiful cakes at home.
Anneka Manning will guide you through the course and share her more than 30 years of baking experience, knowledge and research, as well as all of her handy tips and tricks. You will also have access to a closed Facebook group where you will be able to ask Anneka any questions that arise and be able to troubleshoot while you practise your cake baking throughout the 2-week course.

How will the course work?
This course is made up of 3 key components:
1. Live demonstration:
The live component of this course will take place on Saturday 13th February 2021 at 10.00am-12.30pm Australian Eastern Daylight Time (UTC+11:00) via Zoom.
During the live session, Anneka will demonstrate a chosen cake recipe and you will have the opportunity to bake along with her in real time. This session will be recorded so you can look back at it as often as you like or watch it in your own time if you happen to miss it.
2. Recipes and resources:
The live session will be supported by printable recipes and resources which you can study and work through at your own pace. This will include additional recipes which you are encouraged to practise in your own time during the remainder of the course.
3. Closed Facebook Group
An integral part of the course will be the closed Facebook group. It will be the place where you can ask Anneka any questions that come up as well as troubleshoot any issues that arise during the course. It is also a place where you can share your experience with other like-minded bakers doing the course along with you. This group will be open for questions and feedback for the duration of the course but you will be able to refer back to the content for up to 6 months after the course finishes.

Learn to bake the most traditional of Easter breads – right from your very own kitchen!
Hot Cross Buns Live is a fun and casual 2-hour live baking session where you will learn to make your own traditional Hot Cross Buns – just in time for the Easter weekend!
Anneka Manning will take you through the process step by step, sharing all of her practical tips and tricks along the way. You will have the ability to bake along with her as well as ask any questions that arise as you mix, knead, prove and shape your dough together throughout the session. You can either bake your buns immediately or Anneka will share how to prove the dough overnight so it's ready to bake first thing the next morning.
The live session will be supported by printable recipes and resources which will become your go-to Hot Cross Bun baking kit every Easter. Anneka will also share a number of recipe variations and some ideas of what to do with leftovers (if there are any!)
At the end of this session, you will come away not only with new-found skills and confidence but a dozen just-baked warm buns ready to smother in butter!

I have avoided making shortcrust pastry because it hasn’t always worked and seemed too hit and miss. Each module will include a combination of baking theory and practical exercises. Fun and engaging tasks will help you put into practise what you have learnt while Anneka's fail-safe recipes will inspire you to roll up your sleeves and get baking!
Module 1: Why Do We Bake?
The first module will explore why we bake (or why we should bake!) including the benefits that reach far beyond the kitchen walls. We will take a look at the ‘nasties’ that you will be able to avoid through your home baking, share personal stories and understand that baking is actually all about connecting.
Module 2: The Secrets to Baking Success
During the second module, you will discover the 10 most important things to do before you start baking to ensure you will be on the most efficient road to baking success. You will also learn how to measure accurately and how to get the most from your recipes.
Module 3: The Measure and Mix Method
The third module will explore the Measure and Mix Method – the perfect starting place if you are new to baking or just want to rebuild your baking skills from the ground up.
Module 4: The Baker’s Pantry
The fourth module is all about understanding the basic ingredients most commonly used in baking. Course Outline
Each module will include a combination of baking theory and practical exercises including experiments and recipes. The experiments will bring the theory to life and really show you what is happening when we bake.
Module 1: Becoming an Observant Baker
The first module will introduce you to the concept of the “why” of baking and how becoming an observant – and mindful – baker can change the way you look at baking and, ultimately, the success you will have. You will also be taken through the 7 stages of baking helping you to fully understand what happens to your bake while in the oven.
Module 2: How Leavening Works
During the second module, we will explore what makes your baking rise and gives it lightness – we will look at what leavening is and how it works, the different types of leavening you can use in your baking and which ones are best used for particular recipes.
Module 3: Flour Proteins & Gluten
Gluten (flour protein) is one of the three main structure-builders in baking and is the most complex in the way it works. This module will explore the many factors that control how and to what extent gluten is developed in your bakes, as well as touch on gluten-free flours and what to be aware of when using them in your baking.
Module 4: Sugars
The fourth module will explore sugar including the nine important things that sugar does in your baking and how adjusting the amount or type of sugar in a recipe can really affect the results you get.
Module 5: Fats & Oils
When it comes to fats in your baking, it is not only the type used but also its consistency and how it is combined with the other ingredients, which will help determine the final texture, volume and flavour of your bake. The fifth module will explain the role that fats play in your baking.
Module 6: Eggs
The final module is all about eggs and its many roles. We will look at egg foams, how the freshness of eggs affect your baking as well as the science behind what happens when egg whites are whisked with sugar.
How will I get the most out of this course?
To get the most out of this course, you need to set aside at least 3-4 hours a week to read the content, watch the videos, do the experiments and bake the recipes. We know life sometimes gets in the way (you will have 6 months to access the course content too) but your baking won't improve and you won't enjoy the far-reaching benefits that this course can deliver if you don't put in the time and effort.
Do I have to use Facebook to take part in the course?
If you are not a Facebook user, or you’re apprehensive about joining the group, the course can still be completed without being a member however we do find that our students get more from the course if they do participate. The more you get involved with the group and share your experiences, the more value it will add to your The Science of Baking experience.
My favourite part was being able to ask questions throughout the course based on the baking you were doing, or what you saw others doing. I absolutely respect Anneka's ability to be able to offer information in a very clear and concise manner and I got more than expected from the course. If you are interested in understanding what is happening when you bake, so that you can get better outcomes, then you must do this course!

Immerse yourself in a day full of bread and yeast baking!
This intensive, full-day, hands-on workshop will cover all you need to know about baking bread and baking with yeast.

How will the course work?
This course is made up of 3 key components:
1. Live demonstration:
The live component of this course will take place on Saturday 5th December at 10.00am-12.30pm (Australian Eastern Daylight Savings Time UTC+11) via Zoom.
During the live session, Anneka will demonstrate the process of making a sponge cake, giving you the opportunity to bake along with her. This session will be recorded so you can look back at it as often as you like or watch it in your own time if you happen to miss it.
2. Recipes and resources:
The live session will be supported by printable recipes and resources which you can study and work through at your own pace. This will include additional recipes which you are encouraged to practise in your own time during the remainder of the course.
3. Closed Facebook Group
An integral part of the course will be the closed Facebook group. It will be the place where you can ask Anneka any questions that come up as well as troubleshoot any issues that arise during the course. It is also a place where you can share your experience with other like-minded bakers doing the course along with you. This group will be open for questions and feedback for the duration of the course but you will be able to refer back to the content for up to 6 months after the course finishes.

An important part of this course is the closed Facebook group which allows you to share your experience, receive timely support and generally communicate with Anneka and the other students.
