Q: Can I replace caster sugar with brown sugar?
A: Yes, you can absolutely switch white caster sugar for brown sugar in recipes.
Brown sugar has a slightly finer crystal texture and contains molasses which adds both alovely caramel flavour and added moisture to your recipes. Keeping this in mind your bakes will have a slightly finer crumb texture due to the smaller sugar crystals, an added subtle caramel flavour thanks to the molasses and will also have a softer texture (if crunchy when using white caster sugar) due to the added moisture.
