Q: Can I make my Christmas Fruit Mince Pies ahead of time?
A: Yes, you can make your fruit mince pies well ahead of serving and they will keep in an airtight container in a cool spot for up to 1 week. However, the pastry will soften in this time as it absorbs moisture form the filling, so it is a good idea to refresh them just before serving by popping them back in their tins and giving them 10-15 minutes in an oven preheated to about 170°C / 340°F (150°C/300°F fan-forced).
Alternatively, if you would like to make them more than a week ahead, you can freeze them unbaked still in their tin where they will keep for up to 3 months. Then just bake them from frozen, adding about 5-10 minutes to the baking time, when you want to serve them.
