Q: Why is my buttercream airy and hard to spread even though it was a perfect consistency when I made it?
A: If you made your buttercream in advance and it has been sitting around for a any length of time, large air pockets can form making it not only hard to spread but this will also give a less-than-smooth finish to your final cake. It’s important that you always beat your buttercream well on low speed just prior to spreading it if you have made it in advance.This will help to remove any large air pockets and create a silky soft, smooth consistency.
