Q: I added a tablespoon of extra water to my Anzac biscuit mixture as I like them chewy – is this the best way to adjust the texture?

A: It is both the cooking time and the moisture level of the mixture that are the main things that will determine the texture of your final Anzac biscuits and they are both related. The higher the moisture content (and the wetter the mixture) the longer they will take to become crisp when baking. So, if you add water to the mixture, they will just take longer to reach that crunchy texture and will stay chewy if you bake them for the normal amount of time. To get chewy Anzacs, it is sometime easier not to add extra water and just bake them for 3-5 minutes less depending on how chewy you like them!
