Blind Baking Small Tartlet Cases

Blind baking small tartlet cases can be a little tricky because of their size. Make sure you line them with greaseproof paper or foil rather than non-stick baking paper that can be a little ‘stiff’ and hard to mould to the shape of the tartlet cases. Then fill with uncooked rice – not ceramic blind baking beads or dried beans that can be too large to fit neatly into the corners and, in turn, won't ‘weigh’ the pastry enough to keep it’s shape. Another thing to remember is to make sure you allow enough over hang with the paper or foil so you can use it to lift the rice out easily when you have finished with it.
