Coat Your Soufflé Dishes

When making soufflés, prepare your dishes by first brushing them with butter and then coat them with a dry ingredient such as caster sugar, polenta (cornmeal), dried breadcrumbs or cocoa powder (depending on the flavour of the soufflé).
This coating will help the soufflé 'grip' the side of the dish as it bakes so that it not only rises evenly but also reaches its maximum height (which is exactly what you are after). The chosen ingredient will also form a yummy crust on the outside of your soufflé!
