Q: What’s something you’ll be baking on repeat this month?
A: My pumpernickel & polenta soda bread. It’s a breeze to make and goes beautifully with soup…or thickly spread with butter and drizzled with honey.
Q: Bread or cake?
A: Bread…I can’t go past it.
Q: The cookbook you’re using most at the moment?
A: Darina Allen’s One Pot Feeds All.
Q: It’s a cold Sunday morning and you’ve got friends coming round for morning tea; what do you bake?
A: The classics – scones thickly studded with dates and my mum’s apple and cinnamon tea cake.
Q: What’s one ingredient you’re especially excited to bake with this winter?
A: Rhubarb – it’s wonderful in cakes and tarts.
